Apricot and Hazelnut Stuffing recipe

Preparation Time: 15 minutes | Cooking Time: 40 minutes

This sweet stuffing has everything you'd want from a good stuffing - sweetness, earthiness, richness, a classic herby flavour and crunch from some hazelnuts. Form into stuffing balls or pat into a loaf tin, or try stuffing into a bird.


  • 175g fresh breadcrumbs
  • 140g dried apricots, ready to eat
  • 2 large onions
  • 50g butter
  • 50g chopped hazelnuts
  • Handful fresh parsley
  • 1 egg
  • Salt and pepper
  • Zest of one small lemon


  1. Finely dice the onions and apricots. Melt the butter in a frying pan. Add the onions and fry until golden, then add the nuts, stir and fry until golden.

  2. Take the pan off the heat and stir in the apricots, breadcrumbs, parsley, egg, salt, pepper and lemon zest. Cook for about half an hour at 200C until golden.

You could always use a different dried fruit - dried cranberries or even sultanas would work, but apricots have a lovely chewiness that makes them work well in this recipe. Recipe serves 4.
