Chickpea Stuffing recipe

Preparation Time: 15 minutes | Cooking Time: 25 minutes
This is an excellent stuffing for anyone with gluten intolerances or problems eating bread. Chickpeas combine with red onion, mushrooms and garlic to create a simple yet delicious stuffing.


  • 620g chickpeas, drained weight, around 2 x 400g tins
  • 1 red onion
  • 2 celery stalks
  • 120g sliced mushrooms
  • 125ml chicken stock (gluten free if desired)
  • 2 tbsp. olive oil
  • 1 egg
  • 2 tsp. dried sage
  • 1 tsp. salt
  • 1 tsp. pepper


  1. Finely dice the onion and celery. Preheat the oven to 180C and lightly grease a baking dish.

  2. Heat the oil in a large frying pan and add the onion, celery and mushrooms. Fry gently for around 8-10 minutes until softened and golden.

  3. Add the stock to the pan, bring to a simmer and take off the heat.

  4. Mash the chickpeas in a bowl with your hands or a fork. Add the egg, sage, salt and pepper and then add the vegetable and stock. Stir to combine.

  5. Transfer to the prepared dish. Bake under foil for 30 minutes, then remove the foil and cook for another 10-15 minutes until golden.

Add a little chilli for some spice or try adding some fresh herbs. Recipe serves 6-8.
