Polenta and Pancetta Stuffing recipe

Preparation Time: 15 minutes | Cooking Time: 55 minutes

This unusual, creamy and salty stuffing makes for a delicious roast dinner centrepiece. It's super easy to make, too. Try serving with roast chicken or turkey.


  • 500g ready-cooked polenta
  • 140g pancetta
  • 250ml single cream
  • 250ml chicken stock
  • 1 onion
  • 1 garlic clove
  • 50g parmesan cheese, grated
  • 2 thyme sprigs, leaves picked and chopped
  • 2 tbsp. oil


  1. Cube the polenta and the pancetta. Dice the onion and mince the garlic clove.

  2. Heat the oven to 180C. Heat the oil in a frying pan. Add the onion and fry until soft, around ten minutes, then add the pancetta.

  3. Stir in the polenta and half the cheese. Add the cream, stock, garlic clove and thyme leaves. Stir well, then pour into a baking dish. Sprinkle the rest of the cheese over then bake for 40 minutes until cooked through.

Add some diced chestnuts for a bit of crunch and richness, or use some extra-sharp mature cheddar cheese for a bit of extra flavour. Recipe serves 8.
