Sausage, Chestnut and Bacon Stuffing Balls recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

This little gems have bags of flavour and are an excellent alternative to the usual stuffing recipes. Sausages, chestnuts and herbs combine and are wrapped in bacon before being baked until crisp.


  • 8 meaty pork sausages
  • 1 onion
  • 1 apple
  • 100g fresh breadcrumbs
  • 100g chestnuts, vac-packed
  • 1 egg yolk
  • Small handful fresh sage leaves, finely chopped
  • 16 thin rashers streaky bacon
  • Salt and pepper


  1. Finely dice the onion. Peel, core and dice the apple. Chop the chestnuts.

  2. Remove the casings from the sausages and put into a bowl with the onion, apple, breadcrumbs, chestnuts, egg yolk, sage leaves, salt and pepper. Mix together with your hands and press into 8 balls or 16 small balls.

  3. Wrap the balls with the bacon to form parcels. Bake in a 180C oven for 30 minutes until golden and crisp.

Use a good herby sausage for the best flavour or use your favourite sausage. Recipe serves 8.
