Sausagemeat Stuffing recipe

This easy stuffing is absolutely perfect with turkey, but itís also fantastic with pork or veal. Itís really simple, too.


  • 500g pork Sausagemeat (you can use flavoured sausages if you like a certain type)
  • 200g soft cheese
  • 200g butter
  • 2 fat cloves of garlic
  • 1 onion
  • 2 tbsp. chopped sage
  • 1 tbsp. chopped chives
  • Salt and pepper


  1. Finely chop the onion and mince the garlic.

  2. Gently heat about a third of the butter in a large saucepan and add the onion and garlic. Cook them gently for about ten minutes until sweet and translucent, but not browned.

  3. Transfer the onions and garlic to one side.

  4. Fry the sausagemeat for a couple of minutes, just until slightly browned. Combine with the onions and garlic.

  5. Mix the soft cheese with the mixture. Melt the rest of the butter in a saucepan and combine the butter into the mixture.

  6. Add the herbs and season the mixture well. Taste to check if the mixture is seasoned enough and adjust if necessary.

  7. If cooking in the oven separately, this needs about 50 minutes in an 180C oven. If cooking in the poultry or meat, put it into the oven inside whatever youíre stuffing for the last 45 minutes of cooking.
