Spiced Pumpkin Stuffing recipe

This stuffing is actually cooked inside the pumpkin, but once cooked you can remove it from the pumpkin and use it to stuff things like apples and pears. You can, of course, leave the stuffing in the pumpkin and serve the dish as a big centre piece.


  • 1 large pumpkin
  • 175g finely chopped pineapple, either tinned or fresh
  • 3 apples
  • 175g chopped walnuts
  • 1 jar of cranberry sauce
  • 50ml dark rum
  • 175g dark brown sugar
  • 1 tbsp. minced ginger
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg


  1. Slice the top of the pumpkin off and using a metal spoon, remove all of the seeds. Discard them.

  2. Peel, core, and chop the apples into rough chunks.

  3. In a large bowl, mix together the pineapple, apple chunks, cranberry sauce, walnuts, sugar and rum. When the sugar starts to dissolve, season the mixture with the ginger, cinnamon and nutmeg.

  4. Spoon the stuffing into the pumpkin and cook it in a 180C oven for an hour. Once cooked, use a spoon to pull away the sides of the pumpkin. Mix the pumpkin with the apple stuffing and serve.
