Sweet Mascarpone Stuffing recipe

This is a delicious sweet stuffing, perfect for using in apricots, plums, apples and nectarines.


  • 250ml whipping cream
  • 150g mascarpone cheese
  • 4 tbsp. caster sugar
  • 1 tsp. vanilla extract
  • ½ tsp. ground cardamom
  • 4 tbsp. honey
  • 4 tbsp. apricot jam
  • 1 tbsp. balsamic vinegar
  • 2 apricots


  1. Peel the apricots and slice them in half. Remove the stones and then finely chop them.

  2. In a small saucepan, heat together the apricot jam, honey, and balsamic vinegar. Once syrupy and thick, add the apricot pieces and cook them for a few minutes or until softened. Set the mixture to one side.

  3. In a large, clean bowl, whip the cream until soft peaks form. Beat in the caster sugar until smooth.

  4. In another bowl, beat the mascarpone with the vanilla extract and cardamom. Slowly mix the cream with the mascarpone and then fold in the apricot and jam mixture until marbled.

  5. Use this stuffing cold Ė it doesnít need to be cooked.
