Sweet Potato Stuffing recipe

This very unusual stuffing is actually a sweet stuffing, used to stuff fruit. You can stuff apples, pears, or quinces with it Ė any hardy fruit thatís suitable for oven cooking will do.


  • 1 large sweet potato
  • 100g brown sugar
  • 100g crushed pineapple
  • 100g chopped mixed nuts
  • 100g mini marshmallows
  • 50g butter
  • 1 tsp. cinnamon


  1. Chop the sweet potato into rough chunks and roast it a 200C oven for one hour.

  2. Whilst the sweet potato is cooking, cook the sauce gently Ė combine the sugar with the pineapple, marshmallows, butter and cinnamon until simmering gently. Cook the mixture for about ten minutes, until it resembles caramel.

  3. Add the mixed nuts and stir gently, then remove from the heat and set to one side.

  4. When the sweet potato is cooked, peel the skin away from the potato and mash it with a fork. Mix it with the caramel and then use it to stuff fruit.

  5. The fruit youíre cooking will need about half an hour poaching in liquid. Once poached, stuff the fruit with the caramel mixture and then pop the fruit into a 180C oven for ten minutes or until the fruit is golden.
